I had the hardest time figuring out what stats I need when rolling for gear. "Hm..Spell power sounds right, but what the hell is Stamina for?" Here is a breakdown of basic stats and improved stats and what you need for your 'lock.
First, what they mean:
Stamina - Health Intellect - Amount of Mana, your pet intellect, and crit chance. Spirit - Heath and mana regen and spell power.
Hit - Your chance to hit. Haste - The time to cast spells. Crit - 100% bonus to physical damage. Spell power - Bonus damage.
How to stack them:
If you are not hit capped (see Hit Hit Hit!): Hit > Spell power > Haste > Crit > Spirit > Stamina (Personal preference and spec [Destruction] may prefer Crit over Haste)
If you are hit capped: Just take out the hit!

With respect to the crit/haste debate, i found this little tidbit on one of the Lock forum's I read. makes some sense:
Rankiis says: "Here's my take locks, you need to find the correct balance between the two, both are essential for a real raiding warlock. You really just need to determine if you can afford to hit hard but cast slower, or hit less hard but cast more often.
Lets look at it from a mathematical point of view. For simplicity sake I will use small numbers. Lets say you stack crit so your incinerate has a cast time of 2 seconds and hits for 2000 each hit, so in the span of 30 seconds you have done 30000 damage.
Now if you stack haste and the cast time is 1.5 seconds and does 1500 damage each hit, in the 30 second time frame you have done 33750 damage..."
so like the horribly named lock says, its all a balance. Try playing with spreadsheets or some type of program to see where your balance lies.
