First off some abbreviations that will be used.
IT = Icy Touch
PS = Plague Strike

SS = Scourge Strike (Unholy's Replacement for Death Strike)

Cooldowns
Blood: Hysteria(Hys) & Dancing Rune Blade(DRB) pop these just before your 2nd rotation if you have any trinkets to increase attack power use them aswell. After that use your cooldowns as they become available, DRB has a 1.5min CD and Hys has a 3min CD. You will get twice as many DRB uses as Hys because of the CDs every other DRB use should line up with Hys when they're both off CD use them together.
Unholy: As Unholy you have your Bone Armor, your Ghoul Pet and your Summon Gargoyle. Your Bone Armor should ALWAYS be on you in combat it increases your damage and decreases the damage you take, it's on a 1min CD so refresh it as needed. Now your Ghoul Pet is a good chunk of your damage so make sure you have it out, make sure you get it buffed, and do what you can to keep it alive you can also use pet buff food to max your Ghoul's dps. Summon Gargoyle should be used before your 2nd rotation along with any trinkets you have, pop your trinkets then your Gargoyle and then use them again as they come off cooldown.
Gems
Unholy: For your meta use a Relentless Earthsiege Diamond and one Nightmare Tear will cover the requirements everything else gem for strength adding hit rating only when its needed.
Blood: For your meta use a Relentless Earthsiege Diamond and one Nightmare Tear will cover the requirements
then you can either gem strength or go the slightly more complicated but more rewarding route of Armor Penetration (ArP). If you wanna work in ArP you need to get yourself an ArP trinket such as the Needle-Encrusted Scorpion from heroic Forge of Souls or a Mjolnir Runestone from Thorim's Hardmode in 10man Ulduar. Once you have one of these trinkets you'll need to figure out how much ArP you have and how much you need to add to attain 100% penetration while your trinket proc is active. For the Needle-Encrusted Scorpion you need 582 ArP rating and for the Mjolnir Runestone you need 595 ArP rating, look at what you have from gear then gem to make the difference. If you have over those amounts from gear alone don't worry about it.
Enchants
Weapons: All DKs who are dps should be using Rune of the Fallen Crusader, nothing else!
Head: Arcanum of Torment from the Knights of the Ebon Blade.
Shoulders: Depending on your Rep with Sons of Hodir, Lesser Inscription of the Axe or Greater Inscription of the Axe. Or if you have high enough Inscription Master's Inscription of the Axe.
Back: For Blood use Greater Speed for Unholy either Greater Speed or Major Agility.
Chest: Powerful Stats.
Bracers: Greater Assault.
Gloves: Crusher or Precision if you need hit rating.
Belt: Don't be cheap buy a damn Eternal Belt Buckle and add a gem.
Legs: Icescale Leg Armor.
Boots: I recommend Tuskarr's Vitality just for the run speed increase, it improves your survivability in fights, if you have a problem getting out of fires or getting to a safe zone this enchant is for you. Otherwise use Icewalker or Greater Assault.
Some tips DKs even as dps have alot of abilities to save their asses you have Icebound Fortitude to reduce incoming damage. Anti-Magic Shell can be used to absorb magic damage and convert it to runic power if you know there AoE magic damage at a certain point in a fight pop the shield reduce the damage you take and fill up your runic power healers will appreciate this being used intelligently. Last one you have is Death Pact this sacrifices a summoned ghoul for 40% of your max HP. As Unholy where you should already have your ghoul out just Death Pact to sacrifice him for HP then use Raise Dead to bring him right back. As Blood use Vampiric Blood, Raise Dead, Death Pact you'll gain about 54% of your max HP. One last thing about runic power in any case the more of it you have the better and between pulls or while waiting to pull you can build up more with Horn of Winter and Death and Decay, just alternate theses two dropping the DnD in a safe spot not to aggro anything
